Web apps are websites that are specifically designed for iPod touch and iPhone's Safari browser.
Apple lists hundreds of web apps in their directory. However, you'll notice a lack of an Education category. But, you can find some really useful web apps in other categories, particularly in the Calculate and Productivity sections.
Nearly all web apps are free to use. Some do include advertisements. You should know that a definite disadvantage to web apps is that they require a wireless Internet connection. No connection = no access to the web app. You don't experience this issue if you download and install software applications.
Apple's directory isn't the only place to find web apps. Check out iLounge, iPhone Applications List, and Everything iCafe. Or, on your iPod, go to wakoopa.com or app.getleaflets.com/applist, which are actually web apps that are directories to dozens of other web apps.
In a classroom setting, it is probably easiest if the teacher makes a web page that links to various web app and sites. While there are a variety of ways to create a site for an iPod touch, my favorite is Wirenode. Wirenode is a free service where you create your mobile site online. The layout and font size work perfectly for iPods and iPhones. This way the teacher can update the Wirenode page and not have to worry about updating each iPod's bookmarks.

Want to add a shortcut to any web page or web app to your Home screen? This is called a Web Clip and it lets you jump to the page or app with just one tap.

To make a Web Clip, simply open the page in Safari. Tap the Plus sign at the bottom of the screen. Tap Add to Home Screen and edit the title (if you want). Tap Add and, presto, a new icon is added to your Home Screen!
